Ensaymada Espesyal by Sylvia's Kitchen

One of my discoveries at the CTK Weekend Market is the ensaymada espesyal by Sylvia's Kitchen. They sell these in boxes of 6 pieces (P250) or 12.

For the longest time, the standard for ensaymada has been Mrs. Cunanan. I still like Mrs. Cunanan's ensaymada but now that I think about it, the dough of the ensaymada itself can be too soft. Of course I enjoy the queso de bola and sugar on top but it is also good to find another alternative for delicious ensaymada.

Sylvia's Kitchen's Ensaymada Espesyal's dough has more body to it and it is not as soft. It likewise has a generous heaping of queso de bola on top and its sweetness is just right.

They offer other products like silvanas, polvoron, and decadent chocolate cake. To me, the ensaymada is their best offering, together with the silvanas. The rest are just okay.

The staff who were manning Sylvia's Kitchen's stall at the weekend market said that Sylvia is the sister of Vicki Belo. So, I guess, after enjoying her goodies, you'll need to move on over and get a lipo.
